Healthy No-Bake Berry Coconut Energy Bar
ingredients:
For the energy bar
80 g berries (mixture)
180 g dried coconut
60 g melted coconut oil
Salt as desired
250 g crushed dark chocolate
To serve
Mint leaves as desired
Strawberries as desired
Raspberries as desired
Blueberries as much as you want

How to do
- Line a square mold with parchment paper. Place the food processor bowl on the robot and install the knife blades.
- Pour the berry mixture into the food processor bowl. (Tip: If using frozen berry mixture, let them thaw first.) Mix everything together.
- Place the coconut shavings, coconut oil and salt in the food processor bowl and mix everything together. Spread the dough in the square mold using a spatula or by hand until you obtain a smooth surface. Leave to chill in the freezer for 30 minutes, or until the dough is firm.
- Place the dark chocolate in a heatproof bowl. Melt in the microwave, stirring occasionally so it doesn't burn. Set aside and let cool slightly until the dough thickens.
- Place a baking rack on a large baking sheet. Remove the coconut mixture from the freezer, turn it over onto a cutting board and remove the parchment paper. Using a sharp knife, cut the dough into 8 equal rectangles and trim the edges if necessary. Place the energy bars on a cooling rack. Pour the melted chocolate over the energy bars until they are covered. Then chill them for 1 hour, then serve them with mint leaves, strawberries, raspberries and blueberries.
- Alternative products: Berries can be replaced with frozen berries. Coconut oil can be replaced with coconut butter.
