Delicious zucchini pancakes with red pepper sauce
ingredients for 24 servings:
For the zucchini pancakes:
450 g zucchini cut in half lengthwise
30 g of spring onions
10 g of fresh basil
2 eggs
the zest of a lemon
135 g of flour
1/2 tsp yeast
1/2 tsp salt
1/2 tsp pepper
for the pepper sauce:
250 g pickled peppers
75 g red onions
2 cloves garlic
3 tbsp olive oil
1 tsp granulated sugar
1 tsp of salt
1/2 tsp pepper
80g mozzarella
fresh basil if needed
introduction:
Zucchini pancakes are very easy and quick to prepare and perfect to take on the go or freeze.
How to do
- Preheat the oven to 180°C. Cover the baking tray with baking paper. Place the bowl on the MultiPro Go and install the fine grating disc. Place a medium-sized salad bowl under the Express Serve.
- Grate the zucchini. Squeeze the zucchini with your hands or in a cloth to release the water. Remove the Express Serve and install the multi-grinder and knife blade. Add the spring onions and fresh basil and mix at power 1 for 5 seconds until you obtain a homogeneous mixture.
- Place the chopped spring onions and basil in the medium salad bowl with the zucchini. Add the eggs, lemon zest, flour, yeast, spices and mix.
- Using a tablespoon, place small piles of zucchini on the baking tray and flatten. Cook for 20 minutes at 180°C. Remove from the oven and let cool for 10 minutes on the baking sheet.
- Reinstall the multi-grinder and knife blade. Place the pickled peppers, red onions, garlic, olive oil, sugar and spices in the MultiPro Go and blend for 30 seconds at power 1 until smooth.
- Serve the zucchini pancakes on a plate with the sauce and basil leaves.
