TIRAMISU AU CAFÉ FORT RECIPE

1. In a large mixing bowl, whisk together the egg yolks and sugar until well combined and creamy.
2. Add the cooled brewed coffee and coffee liqueur to the egg yolk mixture. Whisk until everything is well incorporated.
3. In a separate bowl, beat the mascarpone cheese until smooth. Then, gradually add the mascarpone cheese to the egg yolk mixture, whisking continuously until smooth and creamy.
4. In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until well combined.
5. Pour some strong brewed coffee into a shallow dish. Dip each ladyfinger cookie into the coffee briefly, making sure not to soak them for too long, as they can become too soft and break apart.
6. Arrange a layer of soaked ladyfingers in the bottom of a rectangular or square dish. Spread half of the mascarpone mixture evenly over the ladyfingers.
7. Repeat the process with another layer of soaked ladyfingers and the remaining mascarpone mixture.
8. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the tiramisu to set.
9. Just before serving, dust the top of the tiramisu with cocoa powder using a fine-mesh sieve.

5. In a shallow dish, combine the cooled strong brewed coffee and coffee liqueur.
6. Dip each ladyfinger cookie into the coffee mixture briefly, ensuring they are moistened but not soaked.
7. Arrange a single layer of soaked ladyfinger cookies in the bottom of a rectangular serving dish or individual dessert glasses.
8. Spread half of the mascarpone mixture evenly over the ladyfingers.
9. Repeat the process with another layer of soaked ladyfingers and the remaining mascarpone mixture.
10. Dust the top layer of the tiramisu with a generous amount of unsweetened cocoa powder.
11. Cover the dish or glasses with plastic wrap and refrigerate for at least 4 hours or overnight to allow the flavors to meld and the tiramisu to set.
12. Before serving, you can garnish the tiramisu with additional cocoa powder or shaved chocolate if desired.
