Ingredients:

- 2 pounds (1 kg) bone-in chicken pieces or lamb, cut into chunks
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 3 cloves of garlic, minced
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon ground ginger
- 1 teaspoon paprika
- 1 teaspoon cinnamon
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper to taste
- 1 preserved lemon, pulp removed, rinsed, and chopped (optional)
- 1 cup green olives, pitted
- 1 cup chicken or vegetable broth
- Fresh cilantro or parsley, chopped (for garnish)
- Cooked couscous or crusty bread (for serving)


Instructions:

1. Heat the olive oil in a large tajine or a deep, heavy-bottomed pot over medium heat.
2. Add the chopped onions to the pot and sauté until they turn translucent.
3. Add the minced garlic and sauté for another minute or until fragrant.
4. Add the chicken or lamb pieces to the pot and brown them on all sides.
