 SAMBOOSA RECIPE


Here's a recipe for Samosas, also known as Samboosas:

Ingredients:

- For the dough:
  - 2 cups all-purpose flour
  - 1/4 teaspoon salt
  - 1/4 cup vegetable oil
  - 1/2 cup water

- For the filling:


  - 2 medium-sized potatoes, boiled, peeled, and mashed
  - 1 cup green peas, boiled and mashed
  - 1 small onion, finely chopped
  - 2 cloves garlic, minced
  - 1 teaspoon ginger, grated
  - 1 green chili, finely chopped (optional)
  - 1 teaspoon cumin seeds
  - 1 teaspoon coriander powder
  - 1/2 teaspoon turmeric powder
  - 1/2 teaspoon red chili powder
  - 1/2 teaspoon garam masala
  - Salt to taste
  - Vegetable oil for frying

- For serving:


  - Mint chutney
  - Tamarind chutney

Instructions:

1. In a large mixing bowl, combine the all-purpose flour and salt for the dough. Mix well. Add the vegetable oil and mix until the flour resembles breadcrumbs.
2. Gradually add water and knead to form a smooth and pliable dough. Cover the dough with a damp cloth and set it aside for 30 minutes.
3. Meanwhile, heat a tablespoon of vegetable oil in a pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds. Then, add the minced garlic, grated ginger, and chopped green chili (if using). Sauté for a minute until fragrant.
4. Add the finely chopped onion to the pan and cook until it turns translucent.
5. Add the mashed potatoes and green peas to the pan. Mix well and cook for 2-3 minutes.
6. Add the coriander powder, turmeric powder, red chili powder, garam masala, and salt. Mix all the spices with the filling mixture. Cook for another 2-3 minutes to allow the flavors to meld together. Remove from heat and let the filling cool.
7. Divide the dough into small equal-sized balls. Roll each ball into a thin circular disc of about 5-6 inches in diameter.
8. Cut each circular disc in half. Take one half and fold it into a cone shape, overlapping the edges slightly. Seal the edges by moistening them with water.
9. Fill the cone-shaped dough with a spoonful of the prepared filling. Be careful not to overfill.
10. Moisten the open edges of the cone with water and press them together to seal the samosa.
11. Repeat the process with the remaining dough and filling.
12. Heat vegetable oil in a deep pan or kadai over medium heat. Once the oil is hot, carefully slide in the samosas in batches.
13. Fry the samosas until they turn golden brown and crispy. Remove them from the oil and drain on a paper towel to remove excess oil.
14. Serve hot with mint chutney and tamarind chutney.

4. Cut each circle in half and form each half into a cone shape. Fill each cone with the potato mixture, leaving a small space at the top.
5. Wet the edges of the cone with water and seal the top. Repeat with the remaining dough and filling.
6. Heat vegetable oil in a deep frying pan. Once hot, add the samboosas in batches and fry until golden brown. Remove from oil and place on paper towels to remove excess oil.
7. Serve hot with your favorite dipping sauce or chutney.
