1. Rinse the cracked wheat thoroughly under cold water, then drain and set it aside.
2. In a large pot or Dutch oven, heat the ghee or vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent and lightly golden.
3. Add the chicken or lamb pieces to the pot and cook until they are browned on all sides.
4. Stir in the ground cinnamon, cumin, cardamom, and salt. Cook for another minute to toast the spices and enhance their flavors.
5. Add the rinsed cracked wheat to the pot and stir well to combine it with the spices and meat.
6. Pour in the chicken or vegetable broth, and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for about 1 to 1 1/2 hours, or until the wheat and meat are fully cooked and tender. Stir occasionally to prevent sticking.
7. Once the Jareesh has cooked and thickened to your desired consistency (some prefer it thicker, while others prefer a more porridge-like consistency), remove it from the heat.
8. Use an immersion blender or a food processor to blend the mixture until smooth. Alternatively, you can leave it slightly chunky if you prefer more texture.
9. Return the pot to low heat and cook for an additional 10-15 minutes, stirring occasionally, to allow the flavors to meld together.
10. Serve Jareesh hot, garnished with chopped fresh cilantro or parsley. It can be enjoyed on its own or with a side of yogurt, pickles, or grilled meat.

6. Pour the water into the pot and stir everything together.
7. Bring the mixture to a boil over medium heat, then reduce the heat to low and cover the pot.
8. Let the Jareesh simmer for about an hour, or until the cracked wheat and meat are fully cooked and the mixture has thickened.
9. Remove the pot from the heat and use an immersion blender or a food processor to blend the Jareesh until it becomes smooth and creamy.
10. Return the pot to the heat and cook for an additional 10-15 minutes, stirring occasionally, until the Jareesh has reached the desired consistency.
11. Serve hot, garnished with chopped fresh parsley or cilantro if desired.
